La Burrata è un formaggio fresco a pasta filata tipico della tradizione pugliese; è praticamente un sacchetto ottenuto con una sfoglia di pasta filata che contiene un cuore morbido di panna e sfilacci di mozzarella. La sua forma rotonda, provocatoriamente rilassata, ed il suo ripieno è gustoso.
Va consumata sola o anche arricchita con un filo di olio extra vergine di oliva ed una foglia di basilico.
