SCAMORZA
Il suo nome deriva dal verbo SCAMOZZARE che letteralmente significa mozzare del capo. Come da tradizione viene creata spezzando con le mani la pasta filata, plasmandola fino ad ottenere la sua forma tradizionale. Le Scamorze, dopo essere state così formate vengono legate in coppia , dal casaro, e fatte sostare brevemente in salamoia.
